SmartCombi Ovens

One of the winner of the 2008 Kitchen Innovation Award at the National Restaurant Association show, Henny Penny’s SmartCombi oven uses a combination of moist and dry heat to cook twice as fast as a convection oven. The SmartCombi incorporates an auto-reverse fan that circulates heat more evenly for more uniform cooking results from rack to rack. This technology is particularly helpful in cooking bakery items, the company said. The ovens are also self-cleaning and use Crosswise Plus trays and grids to increase capacity.
